Banana Muffins

Found in the Wyoming Christian School Cook book.

While you can simply bake your Banana bread in muffin tins, this has a nicer texture for muffins in my opinion.

Oven Temperature: 375 F

Time: 20 minutes

Makes about 1 1/2 dozen, or a lot more mini muffins.  A snacking favourite of my kids!


1/3 cup butter

Then add:

3/4 cup sugar

1 egg

Mix in:

3 large mashed bananas

Add the following dry ingredients, pre-mixed, in a few swift strokes.

Dry ingredients:

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 1/2 cups flour

And… for ultimate snacking pleasure, or if requested as birthday cake, sprinkle with chocolate chips.

My daughter requested this recipe for her 3rd and 4th birthdays.  I made up them in pretty cupcake wrappers and she was in her glory.  The chocolate chips provided a simple decorative finish and it could not have been easier.

Interestingly enough, she still requests we all have individual cakes for her birthday.  One year we omitted the chocolate chips and decorated with those Banana marshmallow candies.  But she hated that!

She loves monkeys, and I think that is where this fascination comes from!
