Tangy Coleslaw

From the Canadian Living magazine

We actually eat this coleslaw recipe.

1 1/2 cups shredded cabbage

1 cup grated carrots

3 sliced green onions (okay, I substitute regular onions, diced extra small)

2 tbsp horse radish (in a pinch I’ve substituted diced radishes)

2 tbsp light mayonaise

1/2 tsp dried thyme

1/4 tsp salt

1/4 tsp pepper

Mix and serve.  Does well prepared in advance.  Taste will be stronger the longer it sets.

Works great in bulk portions too!  You can use a prepared mix, but why?  This takes maybe 20 min tops and the kids simply love ‘cooking’ this one by themselves!
