Apple Crisp

from Quaker Oats Company

in a 9 x 9 oven safe dish


4 cups peeled and sliced apples, about 6 largish apples.

Toss with:

1 1/2 tbsp brown sugar

1/4 cup water

1 tbsp lemon juice.

Note: I have a preference for Crispin or Mutsu Apples for baking.  They are my all time favourite and I have been known to spend the extra dollar in price difference between these and another kind of apple when I have company coming.  Otherwise I’ll use Ida or Golden Delicious, which are my husband’s favourite eating apple and almost always in my fridge.

Crumb Topping:  mix together well:

1 cup quick Quaker Oats

1/3 cup flour

3/4 cup brown sugar (again, I always use Golden sugar not brown)

1/2 tsp salt

1/3 cup melted butter

Mix the crumb and top your apples with the crumb.  Just use your finger tips, for the mixing and spreading part.  This topping levels nicely but it doesn’t hurt to get it nicely over the whole top of your crisp.

Temperature is 375 degrees for 30 minutes.  We love this recipe and it works wonderfully if you do up enough apples to fill an 11 x 7 pan and use the same amount of topping.

In a pinch, when cooking/baking for others, I’ll make up apples for 2 8 x 8 pans and use just the single recipe of crisp topping.

    oh…if only i’d seen this yesterday morning! i invented a lovely “apple nightmare” in lieu of “apple crisp” yesterday while cooking for some missionaries in town.
