My home smells simply heavenly tonight.That is because I am making a delicious dinner. I had my Crockpot working hard all day to make the bones of the meal, and now the steamer is working away hard too. Can’t get too much more simple than this.
So… The crockpot cooked/heated up a ham roast that I picked up at the Bargain Store [Giant Tiger] for $1.99. To add liquid and flavour, this morning I dumped a can of Pineapple tidbits around this.
In the rice steamer:
2 small or 1 large garlic clove crushed [say… 1/2 tsp dry powder?]
2 chopped/diced onions
1/8 th or a wee bit more vegetable oil
3 whole cloves [say 1/2 tsp dry powder if fresh, wee bit more if over 6 months old]
3 whole cardamon pods [same as above]
1 4 inch stick of cinnamon [about 1 tsp powder if regular store stuff, less if very potent]
aprox 1/2 tsp ginger powder
1 measure of red lentils/Egyptian Lentils
3 measures of brown basmatti rice
Fill with water as if you had 5 measures of rice in steamer
Top with a good layer of Frozen Veggies (tonight broc/cauli, but stir-fry blends are excellent_
This is my mother’s recipe and is uber simple with fantastic taste!
in small sauce pan:
3 tbsp brown sugar
3 tbsp soya sauce (reduced sodium is my preference)
3/4 cup + of Pineapple sauce (hint, drain the crockpot!)
Heat up nicely, add 1/4 cup water and about 2 tbsp of cornstarch. You only need 1 tbsp if you aren’t adding the pineapple tidbits later on, but it will get too runny if you don’t add the extra.
Once that is done, dice up a portion of the meat.
Mix ’em all together… and yum!
Now… this doesn’t always look pretty. Tastes great with chicken too. Especially leftover chicken.
