French Pancakes
Also from the Joy of Cooking.
My husband hates these, so I don’t make them often. But the kidlets and I really like these. Make a strip of jam down the centre, add a piping of Whipping Creme made at the factory where Daddy works and you have a decadent treat. Definitely a food item to stay in the treats file!
Method: Wet Dry method! OR a single batch whips up great in a blender. Plus you can pour out of the blender.
Dry:
3/4 cup flour
1 tsp baking powder
1/2 tsp salt
2 tbsp icing sugar
Wet:
2 eggs
2/3 cup milk
1/2 tsp vanilla
1/3 cup water
These pancakes are not as thin as crepes but they have a nice taste and are great with children. Plus, as a Mom I don’t like the extra fuss in cooking of crepes. These I pour, shake the frying pan slightly and cook for a few seconds, flip… eat!
