Baked Garlic Chicken

This is an absolutely amazing chicken dish.

I believe this is from my Sister-in-law Julie Vriesema… however she says not.  But when I had the original recipe it was in her hand-writing.  So I give her the credit, even though she insists not!

Oven temp: 400 F, but done once chicken is at internal temp of 170 F

Dish: 11 x 7 x 2 inch dish, really any dish the chicken will fit into nicely!

Bake time: 20 – 25 minutes

Serves: 4

Mix 3 – 4 tbsp herb with garlic soup mix (any mix works!) with 1/3 cup mayonnaise (Miracle  Whip type dressing works!)  and 1/4 cup Parmesan cheese (Kraft type works, but is DELICIOUS with the good stuff!)

Rub onto 4 boneless chicken breasts, sprinkle with crumbs and bake!

This is an extremely flavourful way to cook the meat, so you are going to want to serve it with more bland items.  Say, mashed potatoes or plain potatoes, and a nice steamed vegetable like broccoli prepared simply. (like tossed with lemon juice… although the lemon juice with slightly discolour your broccoli if left sitting too long ;) )

    Being that I really like garlic and so does hubby I can see myself making this. I’ll look into getting some potatoes to mash. Do you think that green beans will go with this dish?

    Yes :D you can even toss a little garlic into the beans with some caramelized onions, yum!
