Apple Cinnamon Muffins

Ingredients:

1 large apple, peel and dice, toss with:

1 tsp lemon juice

pinch of nutmeg

and 1 1/2 tsp cinnamon

Dry Ingredients:

1/3 cup, each, white and brown sugars (I always use “golden” sugar for brown sugar)

4 tsp baking powder

2 1/2 cups flour

Wet Ingredients:

2 eggs

1 cup milk

1/2 cup melted butter

This is one recipe where I do mix wet and dry seperately.  Then I mix wet into dry in about 5 strokes.  Then I scrape in the apple mixture and turn/fold only about 3 more times.

Using my 1/2 cup ice cream type scoop thing I fill my muffin cups with exactly 1/2 cup batter.

Temperature is 400 degrees for 25 minutes.  Makes 1 dozen.
